Doubke Chocolate Ginger Muffins

Double Chocolate Ginger Muffins

You Will Need:
1 ½ cup flour
¾ cup sugar
½ tsp salt
2 tsp baking powder
2 tsp ginger
1/3 cup coconut oil

1 egg
½ (or more) cup milk
1 ½ tsp vanilla
½ cup dark chocolate chips
½ cup milk chocolate chips

In a large bowl, combine flour, sugar, salt, baking powder, and ginger.
In a glass measuring cup, combine liquid coconut oil and egg.
Pour in milk until the mixture reaches the 1 cup line, then mix. 
Pour the milk, eggs, and oil mixture into the dry ingredients, then add vanilla. 
. In a separate bowl, mix together brown sugar, wheat flour, and cinnamon.
Soften the 5 tbsp of butter, then incorporate sugar/flour mixture. 
Evenly distribute streusel over the apple mixture.

Bake at 350 for 35-40 minutes, and enjoy!
