Double Chocolate Ginger Muffins
The early bird doesn’t always get the worm. This recipe is quick, easy, and delicious- the perfect morning treat for late risers!

Double Chocolate Ginger Muffins

You Will Need:
  
1 ½ cup flour
¾ cup sugar
½ tsp salt
2 tsp baking powder
2 tsp ginger
1/3 cup coconut oil

1 egg
½ (or more) cup milk
1 ½ tsp vanilla
½ cup dark chocolate chips
½ cup milk chocolate chips

In a large bowl, combine flour, sugar, salt, baking powder, and ginger.

In a glass measuring cup, combine liquid coconut oil and egg.

Pour in milk until the mixture reaches the 1 cup line, then mix.

Mix only until incorporated (do not over mix). The batter should be thick.

Stir in chocolate chips.

Scoop the batter into greased muffin tins.

Sprinkle the muffin tops with sugar.

Bake on 350 for 15-20 minutes.
