Classic Blueberry Coffee Cake

You Will Need:
  
Cake

1 stick of softened butter
¾ cup sugar
1 tsp vanilla
1 egg
2 cups flour
2 tsp baking powder
¼ tsp salt
½ tsp ginger
1 cup milk
½ cup fresh blueberries  
Streusel​
  
½ cup brown sugar
¾ cup flour
1 tsp cinnamon
½ stick softened butter

Whip together butter, sugar, and eggs until fluffy.

Stir in vanilla.

In a separate bowl, mix together dry ingredients for the cake- flour, baking powder, salt, and ginger.

Preheat oven to 350.

Grease a 9x9 inch pan. Pour ½ of the cake batter into the pan.

For the streusel, mix together the brown sugar, flour, and cinnamon.

Sprinkle ½ the streusel onto the batter in the pan and sprinkle the blueberries on top.

Pour the remaining batter into the pan. Add the ½ stick of softened butter to the streusel and mix.

Crumble the streusel on the cake, and bake!
